Seitan Steak

This recipe came about when I was craving salisbury steak but didn't want to use the last few Impossible burgers remaining in the freezer. Thankfully my pantry holds a giant bag of Anthony's Vital Wheat Gluten and here we are. 

This steak does not disappoint and the best part is it's quick and easy! With just a few simple ingredients and a handful of spices you'll be indulging in a tender and juicy steak with just the right amount of chew in no time, and it in no way will remind you of bread unlike so many other seitan recipes out there!

Makes: 2-4 Steaks or Burgers                       Prep Time: 10 Minutes 

Marinade Time: At least 2 Hours.                 Cook Time: 30 Minutes

Seitan Steak Ingredients

  • 1 Small Peeled & Cooked Beet
  • Heaped 1/2 Cup Kidney Beans
  • 1 Tbsp Nutritional Yeast
  • 1/2 Tbsp Steak Sauce (like A1)
  • 1/2 Tbsp Dijon Mustard
  • 1/2 Tbsp Vegan Oyster Sauce
  • 1/2 Tbsp Soy Sauce
  • 1/2 Tbsp Paprika
  • 1/2 Tsp Garlic Powder
  • 1/2 Tsp Chili Powder
  • 1/4 Tsp Onion Powder
  • 1/8 Tsp Liquid Smoke
  • 1/4 Tsp+ Kosher Salt and Black Pepper (to taste)
  • 3/4 Cup Vital Wheat Gluten


Seitan Steak Marinade Ingredients

  • 1/4 Cup Water
  • 1 Tbsp Hummus
  • 1 Tbsp Oil
  • 1 Tbsp Soy Sauce
  • 1 Tsp Turbinado Sugar
  • 1/8 Tsp Liquid Smoke


Directions

  1. Bring a pot of water to a boil with a steamer basket placed inside, you do not want the water to come above the basket. 
  2. Add all of the steak seitan ingredients except for the vital wheat gluten to a blender or food processor then blend until smooth.
  3. Pour your wet mixture into your vital wheat gluten then stir and knead until combined. Do not over knead, you don't want it to become tough! 
  4. Separate dough into 2 to 4 1/2 inch thick steaks or burgers.
  5. Place steaks or burgers into the steamer basket and cover with a lid. 
  6. Steam for 25 minutes, flipping halfway through the cook time.
  7. Combine your marinade ingredients and mix well.
  8. Place your steaks or burgers into a resealable bag with the marinade.
  9. Allow your steaks or burgers to marinade in the fridge for a couple of hours to rest.
  10.  Sear or grill over medium-medium high heat for 2 minutes per side.
  11. Enjoy!

*Can be stored in the marinade before searing for up to 4 days.
